Your Grease Trap


A grease trap is a receptacle designed to remove solids, oils and greases from commercial kitchen wastewater before it enters sanitary sewer lines. The grease traps slow down the flow of hot greasy water, allowing it to cool.  As the water cools, the grease and oils being lighter than water float to the top of the trap the heavy solids drop to the bottom while the water flows down the pipe into the city sewer.  The grease is trapped by baffles that cover the inlet and outlet of the tank.

If the tank is not pumped frequently enough or the drain lines are not maintained properly, backups and blockages occur.  Disposal of any fat, oil, or grease down a sink or floor drain can cause serious problems for your plumbing system. Grease trap maintenance is often neglected, so be sure to have the trap inspected and cleaned out regularly.

Is there a difference between grease traps and grease interceptors?


Not really. Both devices do the same thing – separate and retain free floating oils and greases. Some are small, in-floor or under-the-sink prefabricated units, while others are larger and located outdoors offering much longer hydraulic retention times.
